Galactomannans are polysaccharides composed of a mannose backbone with side groups of galactose. They are used in food industry as stabilizers which increase water viscosity.
Galactomannan is a component of the cell wall of the mold Aspergillus, and is released during its growth. Therefore, detection of this compound in blood is clinically used to diagnose aspergillosis infections in humans.
